Snail Soup


  • Snails;

  • Oil;

  • Garlic;

  • Onion;

  • peeled tomatoes;

  • parsley;

  • basil;

  • potatoes;

  • celery;

  • chili;

  • Flat green beans;

  • bread croutons;

  • salt to taste.


Start by preparing a sauté of oil, garlic, and onion; add peeled tomatoes, parsley, celery, chili pepper, basil, potatoes, flat green beans or jackdaws, snails, and a pinch of salt. Everything is simmered, gradually adding a little water so that a broth is formed to be served when cooked with the bread croutons.
